The Introduction to GIS module covers two main types of content. The first is the concepts that underpin GIS, and for that theoretical basis I recommend Heywood, I., Cornelius, S., and Carver, S. (2011) An Introduction to Geographical Information Systems. Harlow, Prentice Hall.  

The second type of content is the practical "how to" within the software that we are using. For that practical training, I recommend the help files and tutorials on the various software websites. For example, there are good introductions to QGIS here: https://docs.qgis.org/3.16/en/docs/gentle_gis_introduction/ and here: https://docs.qgis.org/3.16/en/docs/training_manual/. Meanwhile there are several guidance videos and tutorials in ArcGIS Pro here: https://www.esri.com/en-us/arcgis/products/arcgis-pro/resources.
