This is not a reading list for the physics associated with each experiment - you should consult the references included in each experimental script for background papers. The following books are useful resources for experimental techniques and data analysis in general.
Practical Physics G.L. Squires Cambridge : Cambridge University Press, 2001. This is the standard book for 1st and 2nd year lab and is still very relevant for 3rd year. Pay close attention to the chapters on common sense errors, graphs and writing papers.
An introduction to error analysis : the study of uncertainties in physical measurements J.R. Taylor Sausalito, Calif. : University Science Books, c1997. More in depth than Practical Physics. Maybe more useful for dealing with more complex (statistically) data.
